Percy Salazar Diaz

Well-renowned in his craft Percy is a self-taught, highly sought after ice sculptor who started his career in ice when he was a chef at the London Savoy hotel. He then moved on to work for a company specialising in ice cubes and sculptures where he was able to gain more commercial experience in his chosen trade.

Percy loves to experiment with different techniques and textures in ice and is always coming up with new ideas in which to carve or present the ice ensuring that PSD Ice Art are always at the forefront of the industry

He is also responsible for training many artists in ice carving all of whom in time have recognised and reached  his own extremely high standards.

Clemente Gava

Clemente Gava

Italian born Clemente initially trained as a chef at the top schools in Italy. Although he was passionate about cooking he soon realised that his forte lay in food carving.

In 2002, at the tender age of 20, he entered his revolutionary vegetable carving known as ‘Il Salotto’ (The Living Room ) into the Villeroy & Boch Culinary World competition and won a gold medal.

His ambitions took him to London and in 2006 he met Percy. He soon realised that they shared the same creative passions and it wasn't long before he found himself working for him as his apprentice.

Now a highly experienced sculptor himself Clemente has gone from strength to strength by adding CAD, computer assisted design, and CNC machining to his repertoire.

Percy and Clemente are firm friends and together they make a formidable team. Watch them at work together and their mutual respect soon becomes clear to everyone.

Ionut Checherita

Ionut Checherita

Ionut started his career as a trainee chef at the Giovanni XXIII chef school in Caorle, near Venice in 2006 He studied there for 4 years and during that time was introduced to fruit and vegetable carving by Italian chef Orlando Scaggiante known around the world as the chef-artist who creates works of art with watermelons, cantaloupe melons, pumpkins and other vegetables.

In 2008 he took part in the international culinary art exhibition IKA 2008 in Erfurt, Germany and 2010 he entered into the Villeroy & Boch Culinary World Cup competition. He won bronze medals for both. He spent another couple of years working in Michelin star restaurants in Italy and England before turning his talents towards ice carving.

Ionut joined our ice team in 2012 as a trainee sculptor and under the watchful eye of Percy, our head sculptor has not only developed into a talented young ice artist but has become an invaluable part of our team. We’re proud to have him!

Andrew Salazar-Crespo

Andrew Salazar-Crespo

Andrew is the youngest member of the ice team and Percy’s eldest son. No surprise then that he demonstrated a strong artistic talent from an early age! Having completed his art GCSE one year early he was accepted into the City of Westminster college where he is currently studying for a level 3 BTECH extended Diploma in Art and design. On his non college days you’ll find him in the freezer practising what he has learnt only this time in ice.
